Spinach and Ricotta Gnocchi

Ingredients

Gnocchi

  • 1 cup good quality ricotta

  • 1/2 cup plain flour

  • 1:2 cup finely grated parmesan

  • 1 egg, beaten

  • Salt and pepper

  • 2 tablespoons finely chopped cooked or 1 block frozen spinach, moisture removed

  • Plain flour, for bench

  • Parmesan, to serve

Tomato sauce

  • 1 tablespoon good quality olive oil

  • 2 cloves garlic, grated

  • 400g canned tomatoes

  • 1 tablespoon tomato paste.

Method

The best way to learn to make this is to watch @warrenmendes video in his highlights.

  1. Mix together ingredients.

  2. Divide dough into four. Gently roll out dough on a lightly floured surface into long sausages.

  3. Cut into small pieces.

  4. Meanwhile, cook tomato sauce. Heat oil add garlic cook until golden, add tomatoes and tomato paste simmer for 10-15 mins.

  5. Bring a pan of salted water to a boil then reduce to a simmer, add gnocchi. Cook until they float to the surface then cook for 20 seconds more.

  6. Remove with a slotted spoon.

  7. Serve topped sauce topped with gnocchi and grated Parmesan.

So so good.

Serves 2 double if you love gnocchi
