Black sesame cookies – seriously simple and unbelievably delicious gluten free cookies

Ok if you have my book Beautiful food you might have tried my amazing Black sesame chocolate cake which is probably the best cake recipe Ive ever written. If you don’t have my book and you would like the recipe hit me up and Ill pop it up on the blog.

Well because I am obsessed with black sesame and all its benefits – it warming, grounding and perfect for anyone who is a bit vata imbalanced. So what does this look like? When vata is out of whack we become fearful, anxious, talkative, unable to sit still or concentrate, our digestion can become compromised and we can find we are constipated or bloated and gassy. To remedy this we need to slow down, eat warming foods and be gentle with ourselves. One of the big vata food medicines is black sesame, you can eat it or you can purchase cold pressed sesame oil, warm and rub it on your skin before or after you shower (note it does stain so make sure you use and old towel to remove any excess).

There are plenty of way I use black sesame I will sprinkle the seeds on salads, soups, porridges but I tend to use black tahini more as I get a concentrated dose then. I add this to porridge, cakes and now gluten free cookies.

This is the easiest recipe ever.

Black sesame cookies

Makes 20

1 cup black tahini

1 cup coconut sugar

1 egg, lightly beaten

your choice of topping, you can use nuts, chocolate chips, seeds

Preheat oven to 180C. Line baking trays with baking paper.

Place the tahini, sugar and egg into a bowl and mix until thick and coming away from the side of the bowl. Shape tablespoons of the mixture into balls, flatten slightly and top with whatever takes your fancy.

Bake 10-15 minutes. Cool on tray.
